About this tour

Slow Food is a philosophy that is widely recognized today and is characterized by three core values that define what food should be: GOOD (of high quality, packed with flavors and aromas, and healthy), CLEAN (produced in a manner that is environmentally friendly and ethical towards animals), and FAIR (affordable for consumers and offering fair payment terms for producers).

The concept of Slow Food emerged in 1986 as a response to the opening of fast food chains, so this global movement opposes fast food and globalization and takes action to preserve local biodiversity and traditions, promote food education, and ensure availability.

In North Macedonia, Slow Food is gaining momentum, with the international catalogue of endangered heritage foods featuring 36 Macedonian products, five of which are protected as “presidiums.” These products, including sweet from wild figs, cheeses from high mountain pastures in Mavrovo, Bukovo pepper, honey from the Macedonian honeybee, and Stanushina grapes, are showcased at various events, including Terra Madre, which is organized by Slow Food every two years in Turin, Italy.

Slow Food aims to protect traditional and regional cuisines from disappearing, encourage the use of plants, seeds, and livestock that are characteristic of the local ecosystem, minimize food waste, and prioritize the use of fresh, raw, seasonal, and locally available ingredients.

The goal is to elevate the gastronomic offerings in restaurants and households by incorporating more indigenous products and local traditional recipes, thereby diversifying and localizing the gastronomy. With each region offering its unique gastronomic brands based on natural, cultural, and climatic factors, such as Shara Mountain and Mavrovo regions with their alpine characteristics and Prespa or Dojran with their Mediterranean charm, Kratovo and Krushevo with their multicultural cuisine, visitors can enjoy a varied culinary experience as they travel from place to place.

To promote this concept, Slow Food Macedonia has created the “Slow Food Inns” concept, which recommends places where visitors can enjoy an authentic gastronomic experience and savor local flavors. Similarly, Slow Food Ohrid seeks to discover local flavors and promote food biodiversity and small producers who are keepers of traditional knowledge and young producers of innovative sustainable products. Events such as the large guest buffet allow visitors to taste Ohrid specialties prepared in a traditional way.
